Ingredients

2 cups old-fashion oats
3/4 cup coconut flour
1/2 cup unsweetened applesauce
1/4 cup coconut oil
1/4 cup agave syrup
1/4 cup brummel & brown butter
1 tbsp apple cider vinegar
Pinch salt

Filling

3 egg whites
15 oz can pumpkin puree
1 tsp vanilla extract
2 packets stevia
1 tsp cinnamon
1/4 tsp pumpkin pie spice
1 tbsp maple syrup
1/4 cup non-fat Greek yogurt
Pinch salt

Garnish

Fat-free cool whip

Directions

Crust

  1. Pre-heat the oven to 350 degrees F and spray the cupcake tin with non-stick cooking spray
  2. Mix all ingredients into a dough
  3. Mold into ‘mini pies’ by using a cupcake pan
  4. Bake pie crusts for 5-10 minutes

Filling

  1. Whisk eggs over low/medium heat. Mix in pumpkin puree, vanilla, pumpkin spice, stevia, cinnamon, salt, and maple syrup until texture is even and smooth
  2. Remove from heat, then mix in Greek yogurt well.
  3. Pour pumpkin filling mixture into each pie crust and bake for about 20 minutes or until tops have browned
  4. Let cool, top with cool whip, and enjoy!
