Ingredients
2 cups old-fashion oats
3/4 cup coconut flour
1/2 cup unsweetened applesauce
1/4 cup coconut oil
1/4 cup agave syrup
1/4 cup brummel & brown butter
1 tbsp apple cider vinegar
Pinch salt
Filling
3 egg whites
15 oz can pumpkin puree
1 tsp vanilla extract
2 packets stevia
1 tsp cinnamon
1/4 tsp pumpkin pie spice
1 tbsp maple syrup
1/4 cup non-fat Greek yogurt
Pinch salt
Garnish
Fat-free cool whip
Directions
Crust
- Pre-heat the oven to 350 degrees F and spray the cupcake tin with non-stick cooking spray
- Mix all ingredients into a dough
- Mold into ‘mini pies’ by using a cupcake pan
- Bake pie crusts for 5-10 minutes
Filling
- Whisk eggs over low/medium heat. Mix in pumpkin puree, vanilla, pumpkin spice, stevia, cinnamon, salt, and maple syrup until texture is even and smooth
- Remove from heat, then mix in Greek yogurt well.
- Pour pumpkin filling mixture into each pie crust and bake for about 20 minutes or until tops have browned
- Let cool, top with cool whip, and enjoy!
